But how can we cook at home in a way that generates as little waste as possible? At the roundtable discussion Waste-Free in the Kitchen, authors will share their experiences and practical ideas – authors who, in their books as well, advocate for a conscious and sustainable approach to cooking. The discussion will cover the creative use of leftovers, the possibilities of fermentation, and also how we can make the fullest possible use of ingredients.
After the discussion, visitors will have the opportunity to meet the authors for a book signing at the HVG Books stand.

Dóra Kocsis is one of Hungary’s most committed advocates of reducing kitchen waste. She looks for creative solutions for how we can use ingredients otherwise destined to be thrown away, from vegetable peels to leftovers. For her, the kitchen is a space for changing attitudes: through the conscious use of local and seasonal ingredients, sustainability can become part of everyday cooking.
